How is vitality the most important ingredient in our kitchen, and why?

Vitality = /vʌɪˈtalɪti/

Noun: “the power giving continuance of life, present in all living things”, is also sometimes referred to as chi or life force.

Only real, whole ingredients straight from the soil and the forest make it to our kitchen. We don’t use any ‘dead products’ from boxes, cans, etc. Read more to know how we work with sustainability at Stedsans.

Local, seasonal plants are our main focus on the menu, and we make sure they grow as wild and free as possible. 

We harvest and forage as close as possible to the serving time, as we believe that this is the way to keep the life force of the ingredients intact and healthy.

The meat and fish we serve are always wild or from regenerative agriculture where the animals only had one bad day in their life. Respect is a key element here.

We consider the well-being of our guests when we make the menu, and make sure each dish is healthy, delicious and pretty. We believe that a truly fulfilling meal needs to nourish both body and soul. 

We cook all food in front of the guests - with very few exceptions nothing we serve is prepared in advance. Just the way cooking has always been done, since the beginning of our existence and up until the era of processed foods we are in now. 

We cook outside all year round with fire as our only heat source in the kitchen. Fire has a potent life force in itself, which we believe is directly transmitted to the food - plus: it’s fun to cook over fire!

And not least: We love cooking & we make sure to have fun in the kitchen. We love the rush of ‘happiness hormones’ dopamine, serotonin, endorphins and oxytocin that cooking outside brings, and we believe our love for what we do transmits to the food.
